The Meat Industry
Certified Laboratories is a full service laboratory established in 1926 with particular expertise in the area of meat analysis.
Certified Laboratories has been a United States Department of Agriculture, Food Safety and Inspection Service (USDA/FSIS) approved laboratory since the 1960’s (Laboratory #: 3677). We have worked for many large and small processed meat manufacturers, as well as companies that import meat to assure quality and safety in their meat products. Some of our areas of expertise in the meat industry are chemical analysis, microbiological and pathogen testing, as well as sampling and analysis of imported meat products to meet the Meat Importers Council of America (MICA) specifications.
Microbiological
Certified Laboratories analyzes meat products for its microbiological quality on a regular basis. This includes indicator organisms and carcass monitoring for e.Coli, as well as monitoring of pathogens including Salmonella, Listeria, Campylobacter, Clostridium perfringens, and others. We currently work with many ready-to-eat meat companies to help assure food safety by monitoring environmentally for Listeria monocytogenes. This can be done by either our representative or yours.
Chemical Analysis
Certified Laboratories currently monitors meat products on a regular basis for its chemical constituents. This includes fat, moisture, protein, PFF (Protein on a Fat Free Basis) and added water. Testing for PFF is used in pork products to assure compliance with USDA regulations. Certified Laboratories also monitors meat products for added Phosphates and added water to assure that their specifications comply with USDA requirements and Nutritional labeling.
Imported Meat Sampling
Certified Laboratories is expert in the areas of meat drilling, as per Meat Importers Council of America (MICA) guidelines. We can arrange sampling and testing of imported beef throughout the Northeast according to these strict MICA standards.
